Ingredients:
- 1 rack of baby back ribs, cut in half so you have have 2, 1/2 racks
- 1 head of garlic, split
- 1/2 cup soy sauce
- 4 qts water
- 2 tbs kosher salt

 

Method:
1. Place all ingredients in 8 qt stock pot
2. Bring to boil and lower heat until liquid is simmering
3. Cover with lid and simmer slowly for 1 hour
4. Remove ribs and let cool
5. Reserve

Strawberry-Cinnamon Glazed Berkshire Baby Back Ribs

          

Ingredients:
- 1# strawberries
- 3/4# sugar
- 2 tbs soy sauce
- 2 tbs sambal oolek
- 1 tsp cinnamon
- 1 tsp of roasted ancho chile powder
- 1 tsp salt

 

Method:
1. Puree all ingredients in food processor
2. Bring Puree to boil while stirring in 2 qt sauce pot
3. Lower heat and simmer sauce for 30 minutes until sauce has reduced by 1/3
To finish dish:
1. Cut racks into individual ribs
2. Broil or grill each rib until a slightly crisp/charred exterior is achieved
3. Glaze lightly with strawberry sauce and garnish with sliced fresh strawberries
